If you run your own dedicated server on Red Hat or another Linux flavour, you might already have, what you need:

“pdftotext”
is a very nice command, to convert PDF files into text files. We use that now, to create previews of documents for a merchant and the beta test runs quite nice. Around 60% of the files can be converted. Quite a good rate!
