Chicken with Bleu Cheese & Asparagus Ingredients: 1 small package of 8-piece cut fryer chicken 1 ½ lbs. fresh asparagus spears, trimmed 2 cans cream of asparagus soup ½ cup bleu cheese, crumbled ½ cup dry white wine 4 tablespoons of flour 6 tablespoons oil 1 teaspoon salt ½ teaspoon pepper What to do: 1. Preheat the oven at 375 degrees F. 2. Mix the flour, salt and pepper. Coat each piece of chicken in the flour mixture. 3. Put the oil in a frying pan and heat. Sautee the chicken until light browned on each side. Let the chicken drain onto a paper towel. 4. Meanwhile, mix the soup, wine and bleu cheese together. 5. Place the chicken in a shallow baking dish. Pour the soup mixture on top. 6. Bake the chicken for a ½ hour at 375 degrees F. 7. Gently toss the trimmed and washed asparagus spears in olive oil and lightly sprinkle with salt and pepper. 8. Place the asparagus on top of the chicken and bake for an additional ½ hour. Enjoy! SIDE DISH: Serve with cous cous or rice. SUGGESTED COCKTAIL: White wine, a good Chardonnay or Pinot Grigio would d o SUGGESTED DESSERT: Coffee, assorted cookies and fruit Ham & Broccoli Strata Ingredients: 20 oz. fresh broccoli 12 oz. Ham 12 oz Swiss cheese 1 fresh loaf of French bread 6 eggs 3 tablespoons Dijon mustard 2 cups of milk 3 tablespoons of minced onion ½ teaspoon of hot pepper or red sauce ½ teaspoon of paprika What to do: 1. 2. 3. 4. 5. 6. 7. 8. 9. Lightly butter a 9 x 13 baking pan. Cut the ham into cubes and combine in a bowl with broccoli and cheese Pour evenly only ½ of the mixture into the baking pan. Cube the French bread and then arrange over the broccoli mixture. Pour the remainder of the broccoli mixture on top. In a separate small bowl, mix the eggs, mustard, pepper sauce and milk. Over the egg mixture over the whole thing and cover with plastic wrap. Chill overnight. When ready, bake at 350 degrees F for 35 to 45 minutes. When ready, sprinkle with the paprika. SIDE DISH: Fruit salad SUGGESTED COCKTAIL: White wine or mimosas SUGGESTED DESSERT: A large slice of chocolate cake with chocolate sauce Spicy Shrimp Soup Ingredients: 1 lb. of fresh shrimp 6 oz. rice noodles (at Trader Joes or in the Asian food section in your market) 1 16 oz jar of salsa (chipotle is always nice) 1 15 oz. can of black beans 1 cup frozen corn 1 green onion, thinly sliced 3 cups of water 3 tablespoon of lemon juice, fresh squeezed 1 tablespoon Asian seasoning (also at your market in the Asian food section) ¼ teaspoon chili powder ¼ teaspoon cumin 1/8 teaspoon pepper ¼ cup fresh cilantro What to do: 1. In a medium size bowl, combine the lemon juice, chili powder, cumin and pepper. Add the shrimp and marinate for about a half hour at room temperature. You can just leave the bowl on the counter. 2. Bring the 3 cups of water to a boil, then add the Asian seasoning. Add the rice noodles, breaking into chunks. Cook for about 1 minute. 3. Add the shrimp and the marinade and cook for another 2 minutes. 4. Stir in the salsa, drained black beans, corn, cilantro and green onion. Heat thoroughly and serve! Note: You can garnish with more cilantro if you l ike and serve with big pieces of fresh French bread or the like with butter. Delicious. SUGGESTED COCKTAIL: Sake or rice wine SUGGESTED DESSERT: Green tea ice cream and dark chocolate pieces |
